Mulled Wine

Equipment

  • 1 spice bag or cheesecloth sachet
  • 1 microplane

Ingredients
  

  • 2 bottles inexpensive medium-to-full bodied red wine like Merlot or Cabernet Sauvignon 1.5 L total
  • 1 orange
  • 1 apple or pear
  • 2-3 tbsp brown sugar
  • 2 sticks cinammon or more for garnish
  • 6 cloves
  • 0.5 tsp freshly grated nutmeg
  • 1 strip mace
  • 1 black or green cardamom pod
  • 2 star anise pods or more for garnish
  • 4 oz fortified wine like Brandy or Port

Instructions
 

  • Fill spice bag with cinnamon sticks, cloves, freshly grated nutmeg, mace, and star anise
  • Crack open the cardamom pod (you can use the side of a knife just like crushing garlic) and add it to the spice bag
  • Thinly slice the orange into rounds, reserving one slice per person for garnish
  • Core the apple or pear and slice it into wedges
  • To a large pot, add wine, spice bag, orange slices (not the garnish), apple or pear, 2 tbsp of brown sugar (you can add the last tbsp later), and port or brandy if using it
  • Bring the pot to a low simmer, then cover it, turn off the heat, and let it steep for 20 mins
  • Remove fruit and spices
  • Ladle mulled wine into mugs and garnish with an orange slice. Add a cinnamon stick and star anise pod to make it extra festive
